What cooking temperatures does the manual specify?
Poultry must reach 74°C internal temperature. Minced meat and kebabs: 68°C. Seafood: 63°C. Hot held food must stay above 63°C during service. Food in the danger zone (5-63°C) for over 2 hours must be discarded. Reheated food must reach 74°C. All temperatures should be verified with a probe thermometer, not visual inspection.
