Bake too much and the cream cakes and fresh bread go into the bin by evening. Bake too little and you turn away the customers who came for exactly that item. Either way, the day's profit walks out the door.
Most small bakeries plan production in someone's head or on a loose sheet of paper. It works until the head baker is on leave, an order spikes, or a new hand takes over. Then batches get missed, the oven jams up at peak, and nobody is sure who was supposed to make the birthday cake due at noon.
Baking is unforgiving on timing and shelf life. A pav has hours, a fresh cream cake has a day, a biscuit has weeks. Plan the perishable items in small, frequent batches and the shelf-stable ones in bulk. Stagger oven slots so prep, baking, and cooling do not collide. Get this rhythm right and the same team produces more with less waste.
There is a food-safety layer too. Every bakery is a Food Business Operator under the FSSAI rules, needs registration or a licence by turnover, and must label packed items with the manufacture date, best-before, and FSSAI number. Good planning and good records go together.

Perishable items like cream cakes and fresh bread cannot be batched like rusk or biscuits. Over-produce a one-day item and it is bin fodder by evening. Match batch size to shelf life.
When the whole schedule lives with the head baker, one leave day or a new hand breaks the routine. Batches get missed and orders slip. A written plan survives the handover.
Everything wants the oven at 8 AM. Without staggered slots, prep, baking, and cooling collide, and the 9 AM counter opens half-empty. Sequence oven time across the morning.
Flour, fat, and dairy prices move constantly. If you do not cost each batch, you do not know your true cost per unit, and you may be selling some items at a loss.
"Someone will make it" is how the noon birthday cake gets forgotten. Every item on the plan needs a named person and a ready-by time so nothing falls through the cracks.
A bakery needs FSSAI registration or a licence, and packed items need manufacture date, best-before, and the FSSAI number. Sorting this out during an inspection is the expensive way.
