Part of what makes the F&B industry so exciting is that food trends are constantly changing here. The past year was the year of cloud kitchen and online food deliveries. We also saw unique hybrid types of outlets opening. Cafe bar, anyone?

Trend #1 Plant-Based Everything

Ever since the Covid-19 outbreak, many people have refocused their priorities. Health and well-being have acquired the front seat, with consumers reassessing what they eat and their impact on the planet.

In the past few years, plenty of people have discovered plant-based, with new products appearing all over the market, from bakery and pastries to pizza, lattes, and even dirty burgers.

In 2021, Peta urged McDonald’s, KFC, and Burger King to add vegan options to their menu. At the end of 2021, McDonald’s gave veganism a green flag by introducing “McPlant”– a vegan burger made with a juicy plant-based patty co-developed with Beyond Meat.

As more consumers adopt a plant-based diet, food manufacturers are developing a wide range of meat alternatives that mimic the taste and texture of meat. Companies are using innovative ingredients such as soy, pea protein, and jackfruit to create plant-based products that are healthier and more sustainable than traditional meat. And this trend is set to continue in 2023!

Trend #2 Potato Milk, Anyone?

Potato milk is going to be the new food trendsetter of 2023. This fresh non-dairy milk, made from boiled potatoes and the water they’re cooked in, has gained traction recently.

As people become more interested in plant-based and environmentally friendly foods, their popularity is bound to grow. Moreover, it is said that the calcium found in potato milk is equivalent to cow milk. Potato milk is a fantastic source of vitamin D and B12.

DUG, a Swedish milk brand startup, has already introduced potato-based milk in some parts of Europe and China. With potato milk entering the market, other plant-based milk, such as oat, soy, and almond milk, will face stiff competition. Potato milk will also pave its way toward coffee shops by the end of 2023.

Trend #3 Japanese and Korean Foods

Dishes inspired by foreign countries have gained massive traction in India in recent decades. People keep experimenting more with different cuisines and flavors. Recently, experts have tracked a particular interest in Japanese and Korean cuisine as they are rich in spices and flavors.

It is not surprising that Indians are drawn to Japanese and Korean cuisine. Rice, noodles, vegetables, meat, sesame oil, chili, pepper, soy, and spices are common ingredients in all three cuisines.

People are already gaga over kimchi, ramen noodles, sushi, fried tempura, etc. A few of these dishes have taken the internet by storm. Due to their increasing fan base, Japanese and Korean cuisines will flourish and gain more popularity in India in 2023.

Trend #4 Bottled Cocktails

An increase in canned or bottled cocktails will create a buzz in 2023! Be prepared to see more delicious bottled cocktails in your neighborhood supermarket.

There’s nothing not to like about today’s premium pre-batched bottled cocktails: they’re convenient, cost-effective, and delicious. Instead of taking time out and recreating their own happy hour beverage, people are now looking for work to be done for them. People want a cocktail that’s already made, tastes good, and can be brought to a friend’s house or the park without lugging an orange peeler.

Waitrose expects these bottled cocktails to be one of the top future trends in food and drink.

Trend #5 Herbal Tea

This is also one of the pandemic’s implications. Due to Covid’s low immunity and side effects, the herbal tea market has grown significantly in the last few years. People use herbal tea to alleviate stress and anxiety, improve sleep, and boost immunity. 

People are expected to choose Darjeeling with a friend over drinks after work. Moreover, “the herbal tea market is expected to grow at a CAGR of 4.2 percent over the next five years,” according to Market Intellix.

Chamomile, yellow, oolong, white, matcha, Earl gray, and even Kashmiri Kahwa can be popular herbal teas in 2023.

Trend #6 Sunflower Butter

Sunflower butter is made from little nutrient-dense sunflower seeds, a great source of protein, healthy fats, vitamin E, and magnesium. It is commonly used as a substitute for peanut butter, particularly by those with nut or peanut allergies

This butter is staking a claim, particularly within the world of ice cream. In 2021, Ben & Jerry’s introduced four non-dairy flavors made with sunflower seed butter. Whole Foods is also on the sunflower butter bandwagon with a Fix & Fogg Oaty Nut Butter! So we predict 2023 will be all about more sunflower butter, please!
