What Is Table Turnover?
A restaurant sells two things, and only one of them is food. The other is the table.
Table turnover is the number of times a single table is occupied by a new party during one service window, whether that window is lunch, dinner or a full trading day. It is worked out by dividing the parties you served by the tables you have.
Table turnover rate = parties served / number of tables
In an Indian casual dining room, serve 84 parties across 21 tables on a Saturday dinner and the rate is 4. Every table earned its keep four times over, which is the figure worth reading beside your sales total.
How to Calculate Table Turnover
Three inputs, one window. Get the window wrong and the number means nothing.
- Parties served: completed bills in that window, not covers or guests
- Tables available: the tables actually in service, so exclude any closed section
- The window: one clearly bounded shift, because a lunch rate and a dinner rate are different animals
Divide the first by the second and you have the rate. Turn time runs the other way: take the window in minutes and divide by the rate, which gives the average minutes a turn consumed, idle gaps between parties included rather than just the eating. A table turnover calculator will do both, and it also asks for average order value, because turns without spend are just churn.

Table management is how the floor is run: statuses, seating, who is waiting. Turnover is what that running produced once the shift closed. You improve the second by fixing the first.

Shave six minutes off the reset and you do not gain a fraction of a turn. You gain the chance to seat one more waiting party before the kitchen closes. A hotel coffee shop, a food court counter and a hospital canteen all run the same arithmetic on shorter windows.
What Actually Slows a Turn
The eating is rarely the problem. The edges are.
- Ordering: a server walking to a terminal and back before the kitchen sees anything
- Settling: the wait for a bill, then the wait for change, then the wait for the card machine
- Resetting: a cleared table nobody has marked free, so the queue keeps standing
- The window itself: how long you may trade is set by state rules rather than national ones, and those rules change, so confirm what currently applies to your format instead of assuming a fixed ceiling
