What Is FOH (Front of House)?

FOH stands for Front of House, the customer-facing side of a restaurant. In India, that includes the dining hall, bar counter, reception desk, washrooms, and outdoor patio if the outlet has one, along with every captain, waiter, host, bartender, food runner, and cashier who works that space. If a guest can see it or interact with a person there, it is FOH. The job of this entire side of the operation runs from the moment someone walks through the door to the moment the bill gets settled and they leave.

Everything behind the kitchen door, the cooking line, prep stations, dishwashing, cold storage, falls under BOH or Back of House.

What Does an FOH Team Look Like in India?

Completely different depending on format. A fine-dine in Indiranagar, Bangalore will have a host, a floor manager, section captains, runners, and a bartender. A casual diner in Salt Lake, Kolkata doing 80 covers on a weeknight? Four waiters and a cashier. That is the whole team. The table below is illustrative, not a hiring template.

“Captain” is a distinctly Indian term you will not find on a restaurant floor in London or New York. The closest Western equivalent is a section lead, but in India the captain carries more weight; this is the person guests flag down to order, the person who fires the KOT to the kitchen, and often the one handling complaints before the manager hears about them.

How Do FOH and BOH Work Together?

Poorly, in a lot of places. Why Does FOH Matter for Indian Restaurants?

Indian restaurants spend 18% to 30% of revenue on payroll, and the floor takes the bigger share because dine-in needs more bodies facing guests than working behind the pass.

Is that spend worth it? Depends on whether your captains upsell. A captain who suggests a soup or a dessert at the right moment can push the guest check average up by Rs.80 to Rs.120 per table; across 50 tables on a Saturday night, the floor payroll starts paying for itself.
